Chocolate Chia Pudding

This is a very quick, easy and healthy option for a dessert. Packed with fibre, omega 3’s and it’s gluten free.


  • 3 Tbsp. chia seeds
  • 1 cup lite coconut milk
  • 1 ½ Tbsp. good quality cocoa
  • 1 ½ Tbsp. honey
  • ½ tsp. cinnamon
  • Toasted coconut shavings and blueberries, to serve


Mix together the chia seeds, coconut milk, cocoa, honey and cinnamon with a whisk. Cover and refrigerate overnight. You have two options for this pudding – you can either leave it as is with the slight pop of the chia seeds or you can pop it into a blender to give you a smooth consistency.

Spoon into cups and top with delicious toppings of your choice:

  • e.g. Blueberries and toasted coconut
  • Toasted nuts
  • Cacao nibs
  • Goji berries
  • Sliced banana or any other fresh fruit
