Serves 3-4

  • Chop up and dry fry in a non-stick pan
  • One onion, One red and one orange pepper, 7 Olives
  • Once cooked add 1 feta round crumbled and chopped up coriander

Then add it to the mixture:

  • 9 Eggs (whisked with about half a cup of low fat milk)
  • Bake in oven for about 20 – 30 minutes on 180 degrees

Serve with 1 – 2 slices of low GI bread for lunch.

For dinner and lunch add a side salad: base lettuce tomato, cucumber.
